I've just gotten a new bonsai - it is lovely. However the soil is seeming to become dry very quickly. Therefore, do I water it more than once a day (when I see that the soil is dry), or do I just water it every day and refrain from watering it more? Could it be the soil that is very draining?

Impossible to tell. We do not know what species you have. The size, the age. the position.

Why does does it dry out? I have not watered my trees for months, as rain takes care of it. Are you in the southern hemisphere? In a very arid zone?

Typically you water as needed, and not byt a schedule.

it is a ligustrum privet, it is in a small pot 14 (length) x 9 (width) x 4 (depth). I'm in England; the bonsai is placed near a window (indoors), which i open every day.

If it is an English Privet then it belongs outside. If you are sure it is drying out then yes you have to water. Where in England are you as there is a bit of variation in conditions in including light depending on where you are,

North Yorkshire, it isn't dying - I don't think - it seems healthy. I was just wondering if I water it multiple times a day.

If you water it thoroughly then it should not dry out that much. I am not sure that having a window open s a good idea. Creates a draft. Is it an English Privet? if it is then it is hardy and does not belong inside. If it is the Chinese species then it is not hardy and needs protection.
