I would like to make the trunk look like more of an S shape, but I don't wanna kill my sageretia. Can I achieve this shape with a trunk chop? If so, is it garuanteed to not die?

An s- shape is typically done when the trunks are pliable. I don’t think your tree can still be bent.
The s- shape is almost a trademark for mallsai ( mass produced trees , all looking the same, sold in supermarkets and 90% of them die in within months after being bought).
Always look at the tree , not what you want it to be.

You can get mowement on the trunk by cutting the trunk and grow new leader. Most of the time you get a more interesting look than the mallsai s shape. But there is a slight chanse that you kill the tree. There are no guaranties.

Thank you for the advise. What do you mean by "grow a new leander"? From What I've seen and understood on the interwebs its advised to leave some branches below the cut, if possible. Would this help with anything?

When you cut the trunk of a tree it will naturally grow a new trunk from the best awailable branch. Most commonly the highest positioned branch. Leaving a branch that grow at the direction of your liking as last branch will likelly train the tree in the direction of your choice. The more foliage you leave the less risk of death and faster recovery. That is the balance we all struggle with. Risk vs benefit. No matter what you do, there are no 100% guaranty for survival. But obviously that goes for trees left totally unprunned as well.

What you need to make sure before you start cutting or styling your tree is that you know how to keep your tree healthy. That can take everything between one year and many years.

That was a little misprint. It should have been "leader", a branch leading the trunk in a new direction.
