Every year or so my son decides to cook thai food and buys a bottle of fish sauce. A year later the expiration date is past, so he buys another. He has four bottles of expired fish sauce.

How would they work as fertilizer?

They smell about the same as fish fertilizer I put on the trees now. That is, during the fertilizer season.

Look up the ingredients:

"Fish sauce is a liquid condiment made from fish or krill that have been coated in salt"
"Some variants add herbs and spices. For modern fish sauces, fish or shellfish is mixed with salt at a concentration of 10% to 30%"

There can be sugar in it as well, or other sweeteners.

The salt alone already would be reason for me to not want to use this.

The expiry date on fish sauce bottles is a joke. A while ago, I bought some Himalayan rock salt, which said on the label that the salt is millions of years old, and then there was an expiry date for next year. Same goes for fish sauce. It's maybe not millions of years old, but contains so much salt that its shelf life is practically infinite. Unless you want to pickle your bonsai, I would not recommend spicing them up with fish sauce ;)
