If i was going to start growing azaleas what would I have to do before actualy planting them?

I suggest you take your time and actually learn how to take care of them, why they like Kanuma, why they need Miracid, why they prefer rainwater, and why you should take out the flowers after blooming.
And IF you mean bonsai, there are many Rhododendron that are not suitable as the leaves don't reduce well.

if i have already doome this reaserch whouod I have to scarify or stratify the seeds. I saw online that you do not need to do either but i just want to double check.

You mean you want to grow azalea and serissa bonsai from seed?
Not something I personally would try. Why not start with nursery material, preferably something native? Better learn to walk before you run.

Is there any other species you could recomend that does not require scarification, but also still has nicd looking flowers. somethinnot to hard to maintain.

All bonsai are hard to maintain if you do not know what you are doing..
Small leaved syringia flowers every year and can be trimmed.
