I just recently got started in bonsai, and went to my local club meeting. They were very cool and gave me some starter trees. I got 2 cuttings from a Natal plum which are in the ziploc and will be for a while but, I also got a 1 year old privet and Natal plum. Could you guys tell me what you think, and also when they'll start gettin more bark?

Welcome, you did the right thing going to your local club. however, it would be useful to know where you are in the world.
The seedlings you have need to do some growing. Depending what country you are in would dictate what to do. If you are in a country that is warm, with little cold, then I would plant them in the groung to get them to a reasonable size quickly. If not then they could go into a large pot which is a bit slower but means you can move it to protect in winter.
Not sure what you mean by more bark, they will develope craggy bark with age.
