By Japanese maples have leaves on them and it turned cold, in the low 30s. I put them in the garage Wednesday night and I'm taking them out this morning. The temperatures are still going to be in the low 40s and I'm worried might go down into the hi 30s again. I'm worried about the leaves. When do I need to protect the leaves?

I usually put temperatures as 2C/35F so that the non US folks don't have to convert the numbers.

You only have to worry about leaves if the weather drops below freezing. I think you can leave them out.

Yes, as long as it dont turn below freezing 24hrs they should be fine. Maples is wonderful in spring. The colder the spring is the longer is the beauty of it. Bringing it indoors just make it faster.
