Generally the best way is just to sow the seed and leave out in the weather. I have no idea how long they will take to germinate, I don't sow tree seeds they take far too long to grow.

Dawn redwoods are extreamly easy to grow from cuttings. I see no reason to grow from seeds.
But anyway. Now is authum in northern hemisphere. Seeds sprouts naturally in spring. It is not just the longevity of the stratification, but also about the conditions after sprouting. So sow your seeds outdoors in authum. Leave them for natural stratification and they will sprout at the perfect time of the year.

Two weeks of cold stratification is a bit short as dawn redwood seeds usually need around 4–6 weeks. You can keep them in the fridge a bit longer. After that, plant them in moist soil and keep them warm and bright.
