i have these species of trees standing outside:
japanese maple
juniperus procumbens
an olive
nandina domnestica 'obsessed'
several taxus

i was wondering how strong they are against cold temperatures because it was -15 degrees here and i don't want any of my trees to die.

-15 is more exception than rule in the Netherlands...

Acer: Behoorlijk. Wel beschermen tegen sterke vorst indien niet in de volle grond
Juniperus: Kan prima tegen de vorst
Olea: Niet winterhard, tenzij oud individu in de volle grond geworteld
Nandina ?
Taxus kan prima tergen kou. Heeft een hekel aan natte voeten

Voor alle bomen geld: Wind tijdens vorstperiodes is de grootste boosdoener. Planten drogen hierdoor makkelijk uit. Uit de wind houden dus.

dit is de engelse forum van bonsaiempire(heb ik ook soms)
but i have an unheated greenhouse, would this suffice for the winter?

The main risk with greenhouses is that they can heat up in winter. You have to be able to monitor them quite well. An half-open shelter would be better in most cases
