I'm not 100% on this yet, but I'm pretty sure it's a birch. I paid my mother a visit and dug this up while I was there. It was easy diggin'. I found a spot in the woods that was soft and wet. This tree came up in minutes. I had to cut only one thick root to pot it.I cut off some dead branches, but other than that I left it alone.
I'll let it grow the rest of the year and proceed from there. I'd like to keep all three trunks but we'll see. It's too soon to think about that now.
What do you all think?

Nice.

I do this kind of spontaneous things a lot, but since I'm a complete noob I never know what soil mixtures to use and what pots I should plant the poor tree in.

I go prepared to collect trees. I bring everything I need.just make sure the roots don't dry out before you pot it...and most importantly, get as many roots as possible.
If it's a seedling like this (or your beech) keep some of the native soil with the roots in the pot.

nice potential there lance...definately a paper birch. ive been wantin a white one for years
