what is the best time to cut in half the leaves?
can i do it in ficus ginseng and Acer Palmatum?

Only do this for trees in very last stages of development. As long as you are still developing the main tree structure & trunk, cutting leaves is countereffective.
When to do it is depending on your location & species. In temperte climate, normally mid-summer.

Cutting off all leaves, wiring starts, this is very time consuming, the hardest part is not to brake the small branches.

first quarter below done, 6 hours wiring. I bend the branches further as they actually should stay in the future, they will flex back up a bit, when the wire is removed.
