I recently was given a Cascading Natal Plum. I am unsure as to how to properly trim them. Some trees you let grow 6 pairs of leaves and cut back to 2. Obviously you can not do that with the species. Any help would be greatly appreciated

Why would you not be able to do that?

I am however not the person to use this mantra of grow six pairs then trim.
For starters, it fully depends on why you are trimming. Do you have a young plant that needs to grow a trunk? You do not trim. Do you have a refined canopy? you might not even let it grow 2 sets of leaves initially.

It depends on the time of year, and species.

So.. Without knowing what you aim for, it is not really possible to give an answer to this.
