I’m currently using organic soil with my bonsais that are all about two years old..should I be using Akadama or actual bonsai soil?

Akadama is bonsai soil, and you do not have bonsai, you have seedlings therefore ordinary potting soil is good enough for several more years yet.The soil you have now is good.
