I have my bonsai sitting on a square dinner plate with water touching the bottom of the bonsai pot. Is this acceptable or will the water wick thru the pot and "over water" the bonsai?

Humidity trays are of little use - but your plate is not a humidity tray.
Only use for it is to prevent water from dripping onto your furniture. Just make sure that, if there's water in it, it doesn't touch the bottom of the pot.

Again, water in the tray is of no use. It won't harm the tree though if it doesn't touch the drainage holes.
