So I was gone for a few days, and watered both of these pretty heavily before I left. Sadly when I got home my Ligustrum was all shrivelled up :( I immediately watered it, and I'm hoping for the best. Any thoughts as to whether its a lost cause? I'm a failure as a new parent it seems.

Often the scenario is:

The plant will grow some new leaves, but they will die too eventually. Plants often do not recover from this.
Continue to care for it, reduce the amount of water (as there are no leaves, so much less evaporation and the soil will stay wet longer).
Don't water according to a schedule, check the soil, let it dry, but don't let it dry out. Other than that all you can do is wait.

Should i take the dried leaves off? or just wait till they turn yellow? And see what happens.

Dead leaves dont yellow. At this stage you can take them off if they bother you. I doubt it will come back.
